Pumpkin Pancakes

4 eggs
1/2 cup canned pumpkin
2 Tblsp Splenda Brown Sugar
1 tsp cinnamon
1 tsp pumpkin pie spice
1 tsp pure vanilla extract
1/4 tsp baking soda
2 Tblsp coconut oil or zero calorie spray

Whisk the eggs, canned pumpkin, vanilla extract , and Splenda brown sugar together . Sift the pumpkin pie spice, cinnamon, and baking soda into the wet ingredients.

Melt small amount of coconut oil in a large skillet over medium heat

Grease the skillet and spoon the batter into the skillet to make pancakes of your desired size. When a few bubbles appear, flip the pancakes to finish cooking.

Taco Soup

1 lb ground lean beef or ground turkey
1 large onion
2 cloves garlic, minced
1 pkg taco seasoning mix
1 small can of diced green chilies
1 28oz can diced tomatoes
2 14oz cans of beef broth
1 1/2 tsp cumin
3 cups chopped cauliflower

Brown ground meat. Add all ingredients and simmer in a large pot for approximately and hour. Serve with a couple of dashes of cheddar popcorn seasoning.

No Potato Salad

1 head of cauliflower
6 eggs, hard boiled and diced
1/2 small red onion diced
3-4 stalks of celery diced
1 cup diced dill pickle
3/4 cup low fat Mayonnaise or low fat Miracle Whip
1 Tblsp chopped dill
1 tsp yellow mustard
Black pepper to taste

Cut the cauliflower into Large florets and steam for about 7-8 minutes or until tender but not mushy. While the cauliflower is steaming put eggs,onion,celery, and pickles to a large mixing bowl, set aside. Once the cauliflower is steamed let it cool in fridge. Once cool : chop into smaller pieces. Add to other ingredients . Cream together Mayo or Miracle Whip , Mustard and Dill. Combine.

Carb Free Jambalaya

2 Boneless Chicken Breasts
1 Kielbasa Sausage
1 cup chopped celery
1/2 cup chopped onion
3 cups Finely chopped cauliflower
3 Tblsp Diet Margarine
1/4 cup chicken broth
McCormick's Cajun Spice

Chop Chicken into small chunks along with the kielbasa sausage. Add 1/4 cup broth to the pan and steam chicken until done. Add kielbasa sausage and 2-3 Tbsp Mccormick's Cajun spice to chicken and kielbasa sausage

In another pan add onion, celery, butter, and cauliflower (you may need to add a dash of chicken broth) steam veggies until done. Strain any juices and put veggies back in pan on low heat. Add diet margarine (add more spice to desired taste) Brown for 2-3 minutes. Mix chicken and sausage with veggie mixture and serve
Eat with Louisiana Hot Sauce or Tabasco for more flavor

Whopper Salad

1 lb ground beef
1 dash of liquid smoke
salt and pepper to taste
1 baby bell light cheese
1 1/2 cups lettuce
1/2 cup tomato chopped
Dressing:
2 Tblsp dill pickle relish
2 Tblsp chopped onion
2 Tblsp light mayo
1 Tblsp reduced sugar ketchup

Brown ground beef with the liquid smoke, salt and pepper. Drain fat, add cheese. Serve on top of lettuce and tomatoes and combined sauce.

Buffalo Chicken Strips

4 chicken breasts
1 bag pork rinds, crushed
1 bottle Franks Red Hot Sauce

Preheat oven to 400 degrees
Slice chicken breasts into strips
Crush pork rinds very fine. Coat the chicken strips with pork rinds. Bake for approximately 30-45 minutes until done. Pour desired amount of Hot Sauce over the strips

Pork Chops with Stewed Apples

2-3 apples cut into bite sized pieces
3-4 tsp Splenda Brown Sugar
3 tsp corn starch(dissolved in a small amount of warm water)
Nutmeg and Cinnamon (liberal amounts to your liking)
8 oz boneless pork chops (thin cut works the best)
Salt and Pepper

First step: put the apples in a small sauce pan with 3/4 cups of water, medium to low heat, and let simmer, stirring occasionally. After about 20 minutes or so, the apples will get soft and start to break down. Add the Splenda Brown Sugar, corn starch and your nutmeg and cinnamon. Continue to cook apples until apples are tender and you have a chunky applesauce.

Second Step:Season pork with salt and pepper to taste. Use other seasoning of your choice. Pan fry the thin pork chops in a small amount of olive oil or zero calorie cooking spray over medium heat until done
Serve with apples spooned over the top of pork chops
